The carob flour "Exquisite" is made outside the island with carob from plantations in Ibiza.
This humble fruit that has always been part of the diet of the animals that were breed in the traditional rural houses ("casas payesas") and that just in times of hunger was consumed by people, is now experiencing an extraordinary revaluation and some of its producers, like Frutos Secos Ibiza, are making several articles out of it with interesting results.
Moreover, the carob has extraordinary nourishing properties (it helps to regulate cholesterol, prevents from anaemia, reduces the fatty acids present in the blood...) and its high content in minerals, specially potassium, and in vitamines (B9, B6, B3, B2, ...) makes of it one of the so-called "superfoods". It is specially recommended for pregnant women and children for its contribution to the cell growth and the prevention of some growth diseases.
The carob flour is very aromatic and has thickener properties, it is then recomended to use it together with other flours. Since it clearly reminds of the flavour of chocolate, it works very good in the preparation of sweet dishes. It is suitable for celiac people.
