Rosé wine to drink very cold, it has a great personality, elaborated with Monastrell (95%), Tempranillo and Syrah (5%) varieties.

Grape varieties: 95% Monastrell, 5% Tempranillo & Syrah
Ground type: Limestone, north of Ibiza
Production: 25hl/h Alcohol: 13% vol.
Ageing: A few months in stainless steel tanks before bottling
Fermentation: morning harvested grape, classified in vineyard and cooled to 0 degrees Celsius in a cooling tank. Grape maceration for 4 to 5 hours in a pneumatic wine-press. Fermentation during 3 weeks, with temperature control under 15 degrees Celsius. With no Saignée (bleeding) of the juice. Grape harvest is done specifically for making rosé wine. Light filtration before bottling.
Nose- Flowery aroma when entering, followed by raspberry notes. Second nose expresses fleur de lis and liquorice.
Mouth- It is a full lively and generous wine. The mitpalatate is intense and spicy, bringing to mind saffron flowers. The long finish is distinctive of a fine rosé, ideal companion of Asian dishes and salad.
